Warm Winter Salad

I LOVE SALADS.  WHAT I DO NOT USUALLY LIKE ABOUT THEM DURING THE COLD MONTHS IS WELL…IT’S COLD.  SO TO HELP ME ENJOY GREENS IN THE WINTER AS I DO DURING THE SUMMER, I DECIDED TO CREATE THIS LOVELY, DARK, LEAFY GREEN TREAT.

Servings: 4-6

Ingredients:

  • 3 large bunches of kale
  • 1 bunch of red beet greens (This is optional.  If not found at the market you can buy beets that have these green still attached or just add another bunch of kale)
  • 1 tsp. of salt
  • 1 tsp. of pepper
  • 1 tsp. of minced garlic
  • 1 tbls. of olive oil
  • 2-3 tsp of red wine vinegar

Directions:

  1. Thoroughly clean all the greens in a clean sink of water.  I washed mine three times.
  2. Once clean, detach the leafy part from the woody stem.  DO NOT THROW OUT THE STEMS THEY ARE EDIBLE AND ARE USED IN THIS DISH.
  3. Once removed, dry the greens thoroughly.
  4. Chop the greens into bite sized pieces.
  5. Slice the stems into bite sized pieces.
  6. Over medium heat, warm your pan and olive oil.
  7. Add the kale and beet green stems, salt and pepper. Saute until tender.
  8. Saute garlic for no longer than 10-20 seconds or it may burn.  The point of this step is to render the flavor from the garlic.
  9. Add the greens in batches, sauteing until slightly wilted, then adding another batch and doing the same until all the greens have been cooked and are wilted.  Cooking until slightly wilted will ensure they have a nice bite to them and will resemble the bite that a summer salad has.
  10. Add the vinegar and cook for roughly 1 minute.  The vinegar will cook down in the warm pan and add a slightly sweet flavor to the greens making them taste less bitter.

Simple Beef Bone Broth

TODAY WAS JUST ONE OF THOSE DAYS WHERE YOU COULD FEEL THE COLD HIT YOUR BONES.  I HATE THAT FEELING.  MY GO TO MEAL FOR DAYS LIKE THIS IS JUST SIMPLE HOMEMADE BONE BROTH.  YES, BONE…BROTH.

Servings: 2

Ingredients:

  • 1 Beef bone shank
  • 3 tsp. of salt (possibly more depending on how salty you like your broth)
  • 1 carrot
  • 1 celery
  • 4-6 cups of water

Directions:

  1. Put all of the ingredients in a pan.
  2. Submerge in water and let boil for 1-2 hours.
  3. Enjoy immediately or if you wish to remove the fat, put a thick layer of cheese cloth into a strainer and strain out the fat.

Peanut Butter Mousse

THIS RECIPE WAS MADE FOR MANY OF US WHO ARE STRUGGLING WITH EXERCISE AND DIETING.  ONE EVENING, I WAS STRUGGLING WITH MY INNER DEMONS…MY SWEET TOOTH.  THE DEMONS WERE WINNING BUT I WAS DESPERATELY CLINGING TO MY LOW CARB-DIET.  THUS, THIS DELICIOUS TREAT WAS BORN!

Servings: 1

Ingredients:

  • 100 grams of Greek yogurt
  • 2 tbls. of chocolate powdered peanut butter
  • 1/4 tsp. of liquid vanilla stevia
  • 1/4 tsp. of liquid chocolate stevia

Optional Ingredients:

  • 2 tbls. creamy or crunchy peanut butter
  • 2 – 4 tbls. of water
  • coco powder
  • peanuts

Directions:

  1. Mix yogurt, powdered peanut butter, both version of the liquid stevia all in a bowl.  If this isn’t enough powdered peanut butter, then you may add more.  Be careful with adding more, it may end up being too thick and clumping.  If the mixture is still too thick for you with the measurements I gave, you can always thin it out with a tsp. or two of water.
  2. For the topping, take the peanut butter and mix it with a bit of water.
  3. Microwave the peanut butter sauce for about 10-20 seconds and stir.  If it is too thick, thin out slowly with a little bit of water.
  4. Garnish with coco powder and peanuts.

Deconstructed Healthy Eggroll

This recipe was inspired by a craving I have had for a while.  As much as I love egg rolls, I do not enjoy all the extra carbs that comes with them when eating at a Chinese restaurant.  So here is my version of egg rolls.

Servings: 2

Ingredients:

  • 1 tsp. of chili powder
  • 1/2 tbls. of smoked paprika
  • 1 tbls. of dried sage
  • 1 tbls. of dried thyme
  • 1 tbls. of pepper
  • 1 tbls. of garlic powder
  • 2 tsp. of salt
  • 2 tbls. of extra-virgin olive oil divided
  • 1 tbls. of maple syrup
  • 1 lb. of extra lean ground turkey
  • 4-6 cups of chopped or shredded cabbage

Optional Ingredients:

  • green onions
  • 1 tsp. sesame seed oil
  • 1 tsp. sesame seeds
  • sriracha

Directions:

  1. Mix all the spices thoroughly with the turkey.
  2. Mix olive oil and maple syrup with the turkey
  3. Add 1 tablespoon of olive oil to a pan and begin to cook meat until browned.
  4. Add cabbage and begin to cook until wilted, not translucent.  Cooking until wilted gives it a nice crunch.
  5. If so desired, top with green onions, sesame seed oil, sesame seeds and sriracha.
